The Hotel Vermont has generated excitement not just for its new-school accommodations, but also for its ground-floor restaurant and bar. Its delightful design—a perfect blend of boutique chic and real Vermont, with reclaimed, antique, red-oak floors; black granite walls; and a free-flowing layout—is only part of the fun. The rest is in the inventive menu, which includes juniper-roasted quail and applewood-smoked pickled eggs, and possibly the best cocktail list in town. Weather permitting, you can stay toasty on the outdoor patio with its central fire pit.
