Red Iguana Review
This lively Mexican restaurant is staffed with a warm and accommodating crew, serving the best house-made moles and chile verde in town. They pour premium margaritas and good Mexican beers, and always keep the salsa and chips coming. Expect a wait almost always. This is a great place to stop on your way to or from the airport if you don't want to take the freeway.

Try driving around Salt Lake City at 8pm on a Sunday night as a total stranger and try to find an open, let alone inviting restaurant. I had caught the name "Red Iquana" while researching Salt Lake City in general while trying to find a way to entertain a couple of grade school boys for the day while Mom was at work. Well, we had set out for the Sugarhouse BBQ, but found it ready to close by the time we found it. So we wandered around downtown looking for something we could safely and affordably approach. Purely by chance or the oversight of the vacation gods, we passed by the Red Iquana, a name I recognized, not a moment too soon, about to blow a fuse with two impatient car trapped boys whining my ears off. I whipped a U turn, pulled in and amazingly was immediatly offered an open table. The place was nearly full, smelled fantastic, and didn't disappoint. The slow cooked pork ribs that were on special for $9 were outstanding, the boys tore into their dinners as well, (which I had some concerns about fire level with, not a problem after the salsa initiation) Great value, a friendlier staff you will be hard pressed to find. It seems there are no shortages of Mexican restaurants in Salt Lake City, but the Red Iquana really stands out.

I travel over six months of the year and place a lot of emphasis on good food. I have found one place in Guadalajara, Mexico that is better. My point? If you don't mind waiting in line(you will)and don't mind a hole-in-the-wall atmosphere (it is), I don't think you will be disappointed. Presentation is above average for "real" Mexican/Southwestern/Native American style restaurants and the waitstaff was friendly.

Love the Enchiladas Suizas. Try the mole sampler if you have never had mole before. Mojitos are yummy.
