For finely prepared steaks and game dishes—from braised beef ribs with mushroom butter to sea scallops with crispy pork belly—Alta's only sit-down restaurant not in a hotel is the place to go. The small interior is cozy, with a sandy color scheme and walls adorned with 19th-century mining tools found on the mountain. Though smaller than wine menus at other gourmet mountain eateries, Shallow Shaft's list is exceptionally well curated.
