With cattle ranches covering the region, the Panhandle is a wonderful, truly authentic place to try some of the best beef and Southern cooking in the nation. Texans don't joke about their fajitas and T-bones. The people of this area are big fans of home cooking, including Soul Food, chicken-fried steak, and the beloved dish known as steak fingers—think chicken fingers, only battered, tenderized steak instead and served with "cream" (white gravy).

A deep tradition of authentic Mexican and Tex-Mex cooking continues here, too. It's not quite as ubiquitous up here as it is nearer to the border, but it's a spicy, sumptuous presence. A must-not-miss dish is the sloppy, artery-busting delight known as Frito pie—a mess of corn chips, home-cooked chili, cheese, and sometimes even jalepeños and onions. No matter where you sup, prepare to do so in jeans and T-shirts. Most restaurants are closed on Sundays.
