There's no question that Nove is a Las Vegas concept, with its oversized dining room filled with custom furniture, a wall of lights and more than 2,400 bottles of Italian wine, and crystal chandeliers that change colors. It works well in Victory Park, Dallas's giant escape from reality. Nove serves generous portions of creative Italian fare. Favorites include Nove Spaghetti, prepared in a corner of the dining room on busy nights. The pasta (some strands flavored and colored with squid ink) is surrounded by chunks of lobster, shrimp, calamari, and more. Consider sharing it and an entrée, such as a 20-ounce T-bone steak or fennel-crusted salmon. Knockout starters include Italian-style sashimi and a gorgeous platter of cured meats surrounded by anchovy-stuffed peppers, flatbread, cheese, and spreading sauces.
