A smartly simple bistro with space for no more than 40 patrons, Persimmon is run by young chef-owner Champe Speidel and his wife Lisa. It's a genial neighborhood spot, a short walk from the bay and just off Bristol's main street—the sort of place where half the patrons know one another, and the rest are out-of-town gourmands who have caught wind of Speidel's considerable talents. The seasonal menu has featured white wine-braised rabbit with gnocchi and sage, and a tasting of Texas wild boar that comprises roasted saddle, seared chop, braised shoulder, and smoked sausage.
