The chef at the island's premier restaurant for American cuisine uses herbs and vegetables from the hotel's garden and locally caught seafood to prepare such superb dishes as lobster johnnycakes with sweet corn salsa and fennel pollen butter or grilled swordfish with lobster mashed potatoes and a lemon beurre blanc. Fans of red meat appreciate the tandoori beef tenderloin skewers with chickpea salad and grilled naan, or the braised short ribs with house-made kimchi, garlicky spinach, and sushi rice.
