When spring arrives, it means that the organic farmers outside of Philomath are serving their bounty. Fresh vegetables, pizzas, local lamb, pork, and halibut are frequent highlights on a menu that features simple fresh ingredients impeccably prepared. Local wines and tempting desserts make the evening perfect. If you don't see coppa (cured pork from the shoulder of the pig) on the menu, ask your server if the chef has any available. They can often add it to a dish, and it's fantastic.
