It's worth venturing a few miles from downtown to this Northeast artisanal butcher, deli, and supper house to sample chef Ben Schade's locavore-focused regional American fare. For a carnivore-minded operation, the menu here has a surprising variety of veggie plates, including roasted delicata squash with corn, and frikeh (a grain), and ricotta cavatelli with chanterelles, sage, brown butter, and Parmesan. But meat and seafood are the real stars, from the smoked ham hock with padron peppers to Southern-style pork chops with garlic sausage, bacon-braised collard greens, and polenta. Also note the daily butcher's selection of meats from the market, or put your fate in the hands of the chef with the "let us cook for you" option (priced $30 and up, depending on how hungry you are).
