Asheville chefs, trained at leading culinary programs, are creating innovative dishes. At many places the emphasis is on "slow food"—made with locally grown, often organic, ingredients. You can find nearly every world cuisine somewhere in the region, from Thai, Cuban, and Jamaican to Nepalese and northern Indian.
