Fodor's Expert Review Umami Burger

This restaurant minichain serves one of the best burgers in the city. The signature burger looks like any other (except for the "u" branded into the top of the buns) but adds unusual flavors throughout, from the patty to the toppings. Dig, if you will, the umami-building process: caramelized onions are doused with star anise, the sweet-accented ketchup is made in-house, and the patty is sprinkled with sea-kelp powder and bonito flake, then sprayed with an oyster extract. The Manly Burger goes a step further, adding beer cheddar and bacon lardons. Starters include salads, fries, truffle fries, sweet potato fries, and onion rings.
