Seafood is the most notable regional specialty. It's not uncommon for chefs to prepare delectable dishes in the evening using seafood caught on the morning of the same day. A trend toward using organic foods and fresh local produce has increased the quality of restaurant meals here. If you enjoy good wine with your meal, try the Long Island chardonnays and merlots. The soil and climate on the North Fork have been compared to the finest wine-producing areas of France, and the wines reflect that quality. On the North and South forks, many restaurants change their schedules depending on the time of year, so it's always a good idea to call ahead in the off-season.
