Always packed with skiers and winter-sports enthusiasts during the cooler months, Sundance is a worthy year-round option for huge portions of stick-to-your-ribs Tex-Mex and New Mexican cooking. You won't find any big surprises here, but the pork tamales and chiles rellenos are both very good, as is the honey-chipotle-glazed barbecue pork tenderloin. If you like your chiles with heat, specify as much—seasoning is generally milder here than in Taos. There's a good beer
list, and margaritas are made with agave wine.
