With the vibrant Zacatecas, The Compound's Mark Kiffin introduced that rare bird to Albuquerque's dining scene: a restaurant inspired by the taquerias in old Mexico. Creative (and nontraditional) offerings—empanada de hongos with queso fresca (tortillas with fresh mushrooms and cheese), tacos of slow-braised cochinita de pibil, serrano-spiked shrimp, and a complex chicken mole come to mind—are complemented by a range of tequilas, mezcals, bourbons, and beer not readily found elsewhere in the state. Its blue facade and simple white walls inside—brightened by an array of festive Day-of-the-Dead papier-mâché masks—make sitting by one of the large open windows feel like a day on the zócalo.
