The panoramic city and mountain views are part of the draw at this fine restaurant on the top floor of the stunning seven-story Sandia Casino complex, but Bien Shur is also one of the most sophisticated restaurants in the city. Even if you're not much for gambling, it's worth coming here for chef Salim Khoury's superbly crafted contemporary fare. You might start with beef carpaccio with marinated Vidalia onions and black-truffle oil, before moving on to Chilean seabass poached in olive oil with spinach risotto, or grilled Rocky Mountain elk chops with smoked corn-and-green chile tamales and blackberry jus.
