You'd be hard-pressed to find a larger or grander space in New Hampshire than the Omni Mount Washington Hotel's enormous octagonal Main Dining Room, which has massive windows that open onto spectacular views of the Presidential Range. Built in 1902, subtle renovations have brought it into the 21st century. Seasonal dishes are sourced from local New Hampshire farms and suppliers; thus, the menu is constantly changing. On it you might find wild salmon wrapped in buttery pastry served over lobster succotash or a rosemary-scented rack of lamb with candied beets. Appropriate evening wear is expected, meaning no shorts or sneakers.
