If you're looking for an intimate meal, this quiet and modest restaurant is the place. Opened in conjunction with restaurant impresario Michael Morton, La Cave is an entirely different concept for Steve Wynn. Instead of large, over-the-top meals, the eatery focuses on wine and Mediterranean-inspired tapas-style dishes. The menu splits the offerings by type of cuisine: From the Sea, Farm, Oven, Garden, Grill, Butcher, and so on. Flatbreads such as ham, egg and cheese with quail eggs, are ideal for sharing, while vegetable dishes including salt-roasted beets with whipped goat cheese and pistachio satisfy those with dietary restrictions. The wine list reflects global selections, with an emphasis on Europe.
