Most of the food at Executive Chef Julian Serrano's eponymous restaurant is served tapas-style, so prepare to order a bunch of small plates. Some of Serrano's signature dishes: lobster-pineapple skewers with wasabi, goat-cheese stuffed Piquillo peppers, fresh oysters with gazpacho foam, and escalibada (essentially, a roasted eggplant). The menu also features ceviche options and numerous different kinds of paella. For dessert, try the almond-flavored Santiago's Cake. There's even a special three-course prix fixe pre-theater dinner menu for $39, as well as a signature $59 tasting menu. And during lunchtime, seats on the edge of the "patio" that face hotel registration and the casino are great spots from which to people-watch.
