Fellow chefs raised eyebrows in wonder when Wolfgang Puck opened this branch of his famous Beverly Hills eatery in the culinary wasteland that was Las Vegas in 1992, but Spago Las Vegas has become a fixture in this ever-fickle city, and it remains consistently superb. The less expensive café, which overlooks the busy Forum Shops at Caesars, is great for people-watching; inside, the dinner-only dining room is more intimate. Both menus are classic Puck. In the café, sample dishes such as pancetta-wrapped meatloaf or Thai-style chicken salad. Options for the dining room might include stir-fried Maine lobster with egg noodles and confit pork belly, and red wine-braised beef short ribs with roasted vegetables and homemade gnocchi.
