David Clawson is in the small plates/tapas genre but with a difference: a food category will be listed—liver, say, or beef—and one dish for each, which in these cases would be foie gras on pears and tenderloin with sambal chili sauce. It's off the beaten path in a suburban strip shopping center but well worth seeking out; get a seat at the big square counter in the center of the room and watch the chefs in action.
