Celebrity-chef Charlie Palmer re-created his famed New York restaurant for Mandalay Bay. It was extensively renovated in late 2016 but retains designer Adam Tihany's four-story wine tower, which holds more than 60,000 bottles that are reached by "flying wine angels," who are hoisted up and down via a system of electronically activated pulleys. A tasting menu is offered with optional wine pairings. But you can also order à la carte; try the seared foie gras with pear and pineapple chutney and cornbread, the baked Ora King salmon, or a 24-ounce bone-in rib eye with Bearnaise sauce.
