Although Montana generally isn't known for elegant dining, several sophisticated restaurants are tucked away among the tamaracks and cedars, where professionally trained chefs bring herbed nuances and wide-ranging cultural influences to their menus. More typical of the region are steak houses featuring certified Angus beef; in recent years, particularly in resort communities, these institutions have diversified their menus to include bison meat, fresh fish, and savory vegetarian options. Small cafés offer hearty, inexpensive meals, and you can pick up on local history through photographs and artwork on walls and conversation with the local denizens. Attire everywhere is decidedly casual: blue jeans, a clean shirt, and cowboy boots or flip-flops are dress-up for most Montana restaurants.
