At this authentic regional Mexican and American Southwestern restaurant every sauce and salsa is made daily to create pure, concentrated flavors—the traditional mole sauces here are delicious. Dishes such as grilled quail served with both green and spicy yellow moles, or the more familiar chicken enchiladas with mole poblano, demonstrate the kitchen's command of this rich, complex concoction. More than 80 different kinds of tequila are available, and you would be hard-pressed to find a better margarita in the city.
