Maine produces well over 90% of the world's lobsters, so it's no surprise that a good portion of its restaurants feature the state's mascot on their menus. Creative chefs have gone well beyond the traditional steamed variety with seemingly endless ways to prepare the dish. Fortunately, the area's restaurants, while almost always giving a nod to the famous crustacean, do not limit themselves to it. Many places specialize in local seafood, and given that Maine has more than 5,000 miles of shoreline, there is plenty of it to choose from. Restaurants range from the casually eclectic to the formal prix fixe—and everything in between. You won't find many international restaurants (except Asian), but most menus make explorations into the flavors of other cultures.
