Ian Schrager revamped the historic Ambassador East Hotel as the affordably chic Public Chicago. In keeping with the democratic pricing, he opened up the restaurant naming to locals, who voted to keep it the Pump Room. In the sleek bar area, complete with gold-leaf ceiling, celebrity spotting still reigns supreme—as it did in the storied restaurant's heydey, when the likes of Humphrey Bogart and Lauren Bacall occupied Booth One. A separate Library Bar off the lobby offers
coffee and pastries by day and cocktails at night.
