Few steak houses advertise their broiler men, but the barrier-busting Keefer's hired acclaimed chef John Hogan to run the kitchen. Hogan's definition of a steak-house menu breaks all conventions by including his signature bistro fare, inventive daily specials (pray for the seafood-rich bouillabaisse), and plenty of fish offerings as well as New York strips and hefty porterhouses. The circular room drops the he-man pose, too. All of which explains why Keefer's pulls the most diverse and gender-balanced crowd of the meat market.
