Hidden up at the quiet Diamond Hawaii Resort & Spa, this Italian restaurant is one local patrons would like kept secret. A circular stone atrium with soaring ceilings gives way to a small piano lounge and balcony, where you can find some of the best sunset views on the island. Below is a lovely garden seating area. It's as romantic as it gets. Capische favorites include cioppino with saffron tomato basil broth; braised lamb shank osso buco style with lemon risotto; and truffle grilled ahi with sautéed butternut squash, Kula corn sauce, and wilted frisée. Intimate and well conceived, this restaurant, with its seductive flavors and ambience, ensures a lovely night out. Il Teatre downstairs is owner-chef Brian Etheredge's fine-dining concept, where he designs and cooks your menu in front of you.

We just happened to have also dined at Capische on April 20, 2008, and had great service. The food was very good, and the staff friendly and attentive. We were especially impressed at the valet driving up with our car as we walked out, and debated about how he knew we were coming.

We started in the bar, it took 25 minutes to get two drinks and the bar was nearly empty. This continued through the dinner, inattentive service. No bread service, didn't need, didn't want but never offered. Poured most of the wine ourselves. After two hours just asked for the check, didin't want to spend another hour waiting for coffee and desert. Food was excellent, prices were reasonable for the area, but no excuse for the slow, slow service.

We just had the honor of dining with the family of the chefs (Chris & Brian) last night. I've had several fantastic meals at great restaurants in my life - but at the end of this meal I could say without hesitation "this is the best meal I've ever experienced". And it was.

The price tag for their personal chef experience (Il Teatro) is NOT for the faint of heart. We didn't ask b/c we'd been referred by the chef's wife and had enjoyed our conversation with her. I'm glad we didn't, b/c I would've talked myself out of it based on the cost. We paid 2-3x more than we've ever paid for a meal before - but it was worth every penny. Not something we can afford monthly right now, but if I could I WOULD! Capische is NOT as expensive - this was for a FULL pre-fixe menu at Il Teatro including all of our drinks.

These 2 chefs (with 1 vision... hehe) are brilliant artists who take their food seriously. They made special note that they choose their wines FIRST and then make the food to compliment it. It was a fantastic pairing - for each of the 5-6 different wines we received.

I couldn't blither enough great things about this place - so if you're feeling like splurging a little don't go to any of the well known, over-advertised places on Maui. Hit up this place - you'll end up paying about the same (or a little more if you go to Il Teatro) and I guarantee that the meal will be top notch.

To top it off - the people were fantastic. Brian and Chris (and their significant others) are fantastic people with great personalities who really made the whole experience a great, entertaining affair. They even anticipated when we were getting up from the table and had the valet bring our car around so it was arriving just as we walked out the door. Just one more way that they nailed the attention to detail I would expect from such an establishment. Best of luck to them - and make sure that you book this place on your itinerary!
