This popular sushi restaurant in the Ritz-Carlton, Kapalua takes design inspiration from the arrival of the ancient Hawaiians over the sea. Hand-carved ceiling beams resemble outrigger canoes, and the back wall of the bar glows like lava. This is a great place to meet friends and raise your chopsticks to a rainbow roll or fresh ahi sashimi before heading to the neighboring Alaloa Lounge. The menu also includes hot Japanese entrées such as baked crab dynamite, but your best bet is to let Tokyo native, chef Tadashi Yoshino, design the meal. His top sellers include tuna tataki salad in ponzu sauce and the Yamato Roll with fresh hamachi (yellowtail) and spicy tuna. The kitchen is open until 9 PM.

The menu is pretty small and focuses on sushi and sashimi, but it is wonderful. Try the Tuna Tataki on the appetizer menu - amazing! The service is fast and the ingredients are very fresh. It can be spendy, but it is authentic Japanese food prepared by Japanese sushi chefs.
