Sam Choy has been called the Paul Prudhomme of Hawaii and aptly so: both are big, welcoming men with magic in their hands and a folksy background in small, rural towns. Choy grew up cooking for his parents' luau business and now has an empire—restaurants, TV show, cookbooks, commercial products—and his two best chef-friends are Prudhomme and Emeril Lagasse. Here, Choy and executive chef Aaron Fukuda interpret local favorites in sophisticated ways, and the fresh fish is the best. The portions, like Sam's smile, are huge.
