"Organic is the only way," say chef/owner Matthew Roher and his partner Steve Howard, who do everything possible to conform their restaurant to this maxim as staunch supporters of the new Market at Trustee Gardens at The Morris Center. Surrounding the outdoor seating, sheltered by a tin roof, you'll find an aromatic herb garden; the restaurant also has two plots of land nearby where they grow much of their produce. The menu includes some excellent, unusual salads including grilled eggplant with warm plum tomatoes flavored with sweet basil and topped with a goat cheese cake. Among the pastas, the wild porcini pappardelle has a distinctive flavor and mix of textures. A local, all-star black grouper takes center stage, seared, over fresh succotash with lump crab meat.
