Kaiyó's decor—an inviting setting that includes colorful abstract mosaics, polished wood floors, and upholstered banquettes—almost steals the show. The menu, a fusion of East and West, offers sushi and sashimi and rolls that combine local ingredients with traditional Japanese tastes. The key lime lobster roll is a blend of Florida lobster with hearts of palm and essence of key lime ($12). The baby conch roll surrounds tempura conch, ponzu mayo, and kimchi with sushi rice for an inside-out effect. Wash it down with an ice-cold Voss—naturally, hip water is served here—or a top-shelf sake.
