Business travelers and vacationers put on their khakis and sundresses to dine in this quiet seafood house loosely themed around Ernest Hemingway's travels. In fact, the Papa Doble cocktail, with rum and grapefruit juice, is reputedly of Papa's own creation. The woodsy dining room provides views of the Hyatt Regency's manicured grounds, a treat in summer when the sun sets late. Choose the Hemingway's "Cayo Hueso" crab cake, served with corn salsa and sweet corn coconut

grits. Other otions are the Duvall Street shrimp scampi, a tribute to the author's love of shrimp, here served with truffled pasta, or the paella, a nod to the time he spent in Spain. Since the Keys were another favorite spot, the baked Alaska key lime is a fitting meal ender.
