The woodsy dining room provides views of the Hyatt Regency's manicured grounds, a treat in summer when the sun sets late. Choose the Hemingway's "Cayo Hueso" crab cake, served with corn salsa and sweet corn coconut grits, or a Seafood Plateau sampler of assorted cooked shellfish. Other options are the Duvall Street shrimp scampi, a tribute to the author's love of shrimp, here served with truffled pasta, or the paella, a nod to the time he spent in Spain. Since the Keys were another favorite spot, the key lime baked Alaska is a fitting meal ender.
