This tiny, fine-dining restaurant may have single-handedly changed the perception of Gainesville from a college town fueled by pizza, chicken wings, and pitchers of beer to an up-and-coming culinary destination with imaginative menus driven by fresh Florida produce. What Paramount is lacking in size and glitzy decor it makes up for with its menu. Try one of the five house salads and such entrées as grilled duck breast over wild-mushroom ravioli or blackened salmon with black-bean crepes. If you miss lunch here, try the Sunday brunch.
