The key is the classic, Memphis-style smoked ribs, slow-cooked over aged hickory and available in five versions, including Memphis-style dry, Tennessee whiskey, and Carolina sweet. Meals are served on real dishes rather than paper plates, soft lighting replaces harsh fluorescents, and B.B. King plays in the background instead of Tim McGraw.
