A long and narrow storefront with sponge-painted walls, this eatery prides itself on welcoming customers, so don't be surprised when the sushi chefs say, "Hi!" when you walk in. Nor should you expect anything but the freshest sashimi, which is elegantly presented and perfectly succulent. As far as cooked fare goes, the Republic is democratic -- everything is even and consistent. Shumai, soft shrimp dumplings with ponzu (soy, rice vinegar, sake, seaweed, and dried bonito flakes) dipping sauce; whole fried soft-shell crab; and salmon teriyaki are particularly noteworthy.

I had a very refreshing roll called a Boo Boo Tuna. It was wrapped in thin layers of cool cucumbers with tuna, avocado and masago inside. A little dab of spicy sauce was added on the top of each slice. When you put it in your month an explosion of textures and tastes remind you of a cool summer breeze.
