Washington foodies wept when Fabio Trabocchi took his Italian talents to the briefly beloved Fiamma in New York City, but he soon returned to the District to open this refined yet ultramodern Downtown kitchen. Trabocchi's flights of fancy, such as smoked caviar-topped tuna and other quasi-raw small plates known as susci, are just as delightful as his standard offerings—try the rich pappardelle with short-rib ragu or oysters with icy granita. Happy hour and lunch bring an affordable cast of small plates to go with the inventive cocktails and encyclopedic wine list, but date night is the best way to experience this gem.
