Maestro. The Ritz-Carlton's dining room is one of the brightest restaurant stars in metro D.C. In the state-of-the-art open kitchen, chef Fabio Trabocchi emphasizes both traditional Italian cooking and his creative takes on the classics. The menu changes often, but you might find potato ravioli in black-truffle sauce, sea bass with fennel confit, and grappa risotto. Desserts might be bonbons filled with rose, lavender, and peach ice cream or a chocolate délice (chocolate custard wrapped in a chocolate turban). Three-, five-, and seven-course menus range from $85 to $155 depending on the day of the week.
