The fingerprints of Ashok Bajaj, creator of Chinatown's überpopular Rasika, are all over this modern kitchen specializing in hearty Florence-inspired cuisine. The 120-seat dining room is decked out in Bajaj's favored spare tones and metallic accents, while servers remain uncommonly attentive and knowledgeable. And in a city where Italian spots too often hit obvious notes such as brick-oven pizzas, Bibiana's customers can try presentations such as buttery "burrata" mozzarella with pureed zucchini and blue crab served atop linguine colored jet-black by squid ink. The surroundings may be rich, but the ample portions and sensible prices make for a recession-friendly splurge.
