This formerly staid dining room in the Ritz-Carlton got a modern makeover that matches the inventive cuisine stylings of new chef Frederic Chartier, who cut his teeth running the kitchen at culinary legend Eric Ripert's Blue restaurant on Grand Cayman Island. Warm tones of red and orange accentuate the sensuality of the Italian-inspired menu. Standout dishes include the tangy cheese and artichoke terrine with balsamic vinaigrette and an organic chicken in fragrant bacon sauce. At breakfast, the cranberry brioche French toast is another favorite.
