Philadelphia import Guillermo Pernot's rollicking supper club is decked out like an Epcot Center version of Havana, a Technicolor bravado that's matched by his bold "Nuevo Cubano" cuisine. The fish is served with cheeky accompaniments such as coconut-ginger salsa on ceviche, while even an old-school standard like guacamole can't escape without a postmodern tweak of pineapple. But playing with tradition pays off—the creamy six-seafood paella is pure magic, and the watermelon mojito puts the old-fashioned style to shame. The vivacious bar scene, even on weeknights, makes this no place for families or those seeking a quieter night.
