Chef Jean-Louis Gerin specializes in what he calls "la nouvelle classique" French cuisine, a style based on stocks and reductions—and his own dedication to excellence. A five-course degustation menu explores the day's special offerings, which might include sea salt-encrusted foie gras with aged sherry vinegar and a duck a l'orange reduction or a seared ostrich fillet with buttery mashed potatoes. Heady roses, signature fine china, custom glassware, and touches of lace create a romantic, sophisticated atmosphere.
