"Soup's on" (get it?) occupies two intimate rooms in this historic cabin and dishes up Nouveau American cuisine with a strong French accent. Local produce is accented with organic herbs grown on the premises. Try the seared Hudson Valley foie gras to start, followed by the Colorado elk tenderloin complemented by a glass of wine from the comprehensive wine cellar. Call ahead for your seating time: 6 or 8:15.
