Fodor's Review:

The ambience in the Broadmoor's "American Brasserie," along with the innovative contemporary American cuisine, is a successful blend of big-city elegance and Western casualness. The 14-foot wine tower revolving slowly behind the bar immediately grabs your eye; next you may take in Summit's curved room, with windows interspersed with wood columns. The menu includes year-round favorites and a seasonal section; you may enjoy the subtle blending in the chestnut-and-apple soup; the Maine lobster and persimmon salad; or the pan-seared wild striped bass with roasted salsify, black trumpet mushrooms, and veal jus. Thirty wines are served by the glass, and half the fun of dining here is the conversation with the sommelier or the knowledgeable waitstaff about pairing the wine to food. Reservations are strongly recommended.
