In a town known for its beef, WaterCourse stands out as a devoted vegetarian eatery, and now that it's moved to new, more-spacious digs uptown, even more herbivores are able to access its delectable creations. This casual, low-key place serves three meals a day, most of which are based on fruits, vegetables, whole grains, and meatlike soy substitutes. There are vegan and macrobiotic dishes available, along with items for those who eat cheese and eggs. The Reuben, with sauerkraut, portobellos, and Swiss on grilled rye, is amazing.
