Flagstaff House

Fodor's Review:

Sit on the patio at one of Colorado's finest restaurants and drink in the sublime views of Boulder from the side of Flagstaff Mountain. Executive Chef Mark Monette has fresh fish flown in daily, grows some of the herbs for his cuisine, and is noted for his exquisite combinations of ingredients—some organic—and fanciful, playful presentations. The menu changes daily, but sample inspirations include ruby red trout with salmon and scallops in caviar butter and watercress sauce; buffalo filet mignon and foie gras Wellington; and Tasmanian king salmon with spicy mustard glaze. The wine list is remarkably comprehensive.
