After restaurants in Los Angeles, New York, London, and Tokyo, celebrity chef Nobu Matsuhisa brought his Nouveau Japanese cuisine to Aspen in 1998, opening in a former miner's cottage that's listed on the National Register of Historic Places. Although you shouldn't expect to see Nobu in the kitchen, his recipes and techniques are unmistakable. His shrimp with wasabi pepper sauce is scrumptious, his king crab tempura is delicious, his new-style sashimi marvelous, and his prices astronomical. Check out Matsuhisa Lounge upstairs (or outdoors in warm weather) for cocktails and a limited but still superb menu.

    The place was nice, and with the help of some locals, we ordered right! Interesting combinations of flavors. Very small portions....which are also pricy. Would definitely go again for a light bite.
