Chef Corey Lee's modern Californian Mecca is a must-stop for those who hop from city to city, collecting memorable meals. Each dish in the 15- to 19-course tasting menu is a marvel of textures and flavors, presented meticulously enough to make this one of only two restaurants in the city to earn three Michelin stars (the other is Saison). Lee, formerly of French Laundry, handles Asian ingredients—a thousand-year-old quail egg, xiao long bao dumplings, and sea cucumber—with a Western touch. You may find dishes like Hokkaido sea cucumber stuffed with lobster, pork belly, eggplant, fermented pepper or eel. An extremely professional staff is behind the quick pacing and on-point wine pairings. Bare-wood tables and a minimalistic interior guarantees concentration on the plate. The tasting menu is mandatory.
