The name of this hot dining spot, created by celebrity chef Bradley Ogden and tucked inside the San Diego Marriott Del Mar hotel, means "art of the earth." You find just that in gorgeous hors d'oeuvres such as Maine lobster cakes with a roasted beet salad or Fuji persimmon salad with goat cheese soufflé and in entrées such as bigeye tuna stacked on wild baby leeks or Moroccan spiced squab. The menu changes daily to reflect what's fresh. A sushi bar is open nightly. The extensive wine list is all-American.
