The creation of chef-owner Bernard Dervieux, Cuistot is a big, bright, airy reproduction of a rustic French farmhouse on El Paseo's west end. Service is both inside and outside on a tree-shaded patio. The restaurant attracts a moneyed clientele, who savor classic Lyonnaise cuisine. Roasted rack of lamb, quail stuffed with sweethbreads, roasted rabbit with Dijon sauce, and made to order souffles are listed on the menu.
