The creation of chef-owner Bernard Dervieux, Cuistot is a big, bright, airy reproduction of a rustic French farmhouse on El Paseo's west end. Service is both inside and outside on a tree-shaded patio. The restaurant attracts a moneyed clientele, who savor classic Lyonnaise cuisine. Roasted rack of lamb, quail stuffed with sweethbreads, roasted rabbit with Dijon sauce, and made to order souffles are listed on the menu. If you want a small taste of several items, choose the Cuistot Lunch Box, four small plates on a single platter.
